Madrina Vegana is New York City's first and only vegan Mexican food truck, serving deep-fried tacos, loaded nachos, burritos, and more from its base in Bushwick at Brooklyn Roots Collective. Founded by Executive Chef Erica Muñoz during the pandemic, the truck has grown to 18K Instagram followers and a loyal following across the city. Madrina Vegana has a regular presence at Smorgasburg and the Planted Culture Market at Washington Square Park.
