Grezzo Raw Chocolate was founded in Rome in 2014 by Nicola Salvi, becoming the world's first pastry shop focused on longevity and raw vegan confectionery. The brand produces chocolate, gelato-style frozen desserts, and pastries free from gluten, soy, refined sugar, and dairy, using minimally processed plant ingredients. Grezzo operates two stores in Rome and one in Milan's Isola district, alongside active e-commerce. It received the Gambero Rosso Best Shop of the Year award in 2015.
