Thrilling Foods makes Thrilling Bakon — a plant bacon built from non-GMO soybeans, palmfruit shortening, yeast, sea salt, black pepper and maple syrup. Founder David W. Jones began developing it in Portland during the pandemic and first sold it at the Beaverton Farmers Market in January 2021. The whole catalogue is that one recipe, sold whole or pre-crumbled as Bakon Bits, through the brand's own shop, grocery retail and foodservice.
