Vegan Agrivilla i Pini is a restored farmhouse and working vineyard on the hills outside San Gimignano, run on permaculture principles with produce grown in the surrounding gardens feeding the nightly four-course dinner. Adults-only and intimate by design, the property pairs its saltwater pool and peaceful grounds with a deeply seasonal kitchen where the distance from garden to plate is measured in footsteps. Own-label vegan wines from the estate round out the table.
